Surti Kolam rice grains are short, soft, and easily digestible. They are commonly used as everyday rice in the Gujarat region. Additionally, this rice variety can be used to prepare various dishes, including soft idli, crispy dosa, dhokla, spicy flavored rice, curd rice, and delicious kheer. It can also be used to make a thick palatable soup of rice and milk called “pej” or "kanji."
